Parade Day Breakfast

Parade Day is here! We're hosting friends (and friends of friends) for breakfast, but in all likelihood it will turn into late afternoon before we leave the apartment! Here's a sneak peak of what I made for breakfast! Enjoy!

Cheesy Hashbrown Casserole
Adapted from a a recipe I received through an email recipe exchange
Time: 1 hour
Serves 6-8

Ingredients
1 bag shredded hashbrowns
1 can cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese
salt& pepper
butter
Sleeve of ritz crackers

Directions
1. Preheat oven to 350.

2. Mix hashbrowns, cream of chicken, sour cream and cheese in a bowl.

3. Spray pam in a casserole dish, coat the bottom of the pan with a little bit of milk, and place hasbrown mixture inside.

4. Melt 1/4 cup butter in the microwave.

5. Crush ritz crackers into a bowl and mix in with melted butter.

6. Spread crackers/butter across the top to create a topping.  Add salt and pepper to taste.  Cook for 45 minutes.

Baked French Toast
Adapted from Whatever...
Time: 40 minutes
Serves: 6

Ingredients 
1 stick of butter (melted) 
1 C brown sugar 
1 teaspoon cinnamon 
15 pieces of bread 
2 C milk 
6 eggs 

Directions 
1. Preheat oven to 350.

2. Melt 1 stick of butter, then add brown sugar and cinnamon; stir together 

3. Pour mixture into 9x13 pan to cover the bottom.  Layer bread on top of the sugar mixture. 

4. In a mixing bowl whisk together milk and eggs 

5. Pour egg mixture over bread 

6. Bake at 350 degrees for 30-35 minutes, or until golden brown 

7. Remove from oven, drizzle syrup over the top; put back in the broiler until brown and bubbly, maybe 2-4 minutes.
